Mine aren't crazy about beets, but if I mix them with sweet potato, then, look out! You'd think they'd be good for coloring (they turn your urine red--just found that out after a trip to the farmer's market) and my aunt uses them to dye her kitchen lace curtains pink. NutritionData.com doesn't show them as having any zeaxanthin and only a small amount of beta carotene, but they don't report on tannin, so maybe that's the color agent??? I know beet tops contain high amounts of oxalic acid but otherwise they are very nutritious too.

Sometimes you can find "golden beets" which are yellow instead of beet red and those are sweet and delicious!!!
