You got me doing a lot of research on beets now. The red pigment is betaine. Beets are high in oxalic acid. There is an interesting article on beets consumed by humans HERE.

Because of the oxalic acid I recommend an occasional serving of beets. I also add cuttle bone powder to the dish.
