Commercial foods often have chemicals that are thought to harm hermies. You're better off to just not use commercial foods. Your crabs don't eat the crab cakes probably because they don't want to touch them.
Give them some fresh food instead, and they'll chow right down! I used to think that my crabs didn't eat, but then I took all the pet store food out of their diet, and now it is very obvious that they eat!
